Roasted Beet Salad with Ginger Vinaigrette
Ingredients
2 beets
baby spinach
crumbled goat cheese
walnuts
olive oil
balsamic vinegar
1/4 avocado

ginger vinaigrette
balsamic vinegar
olive oil
1 garlic clove
1-2 teaspoon minced ginger root
2-3 tbs chopped chives
1-2 tbs of honey
salt
pepper
I threw this salad together last night after having something similar at a restaurant a few weeks ago. While mine isn’t exactly the same, I must say my version was quite AMAZING. I don’t have exact measurements for all of the ingredients, so my best suggestion is to use your own judgment when adding the oil, balsamic, salt and pepper and use the amount that works for you based on your personal taste. Enjoy! :) 


Directions
- preheat the oven to 400 degrees
-  cut off beet stems and place beets in baking dish with water then season with the salt and pepper. you can also add oil and balsamic to the water which will enhance the beet’s flavor
- cover with foil and bake for about 45 minutes to 1 hour, then cool in pan
- peel beets and cut into halves or quarters, depending on size
- blend the vinaigrette ingredients in a blender or food processor
- add beets, avocado, walnuts and goat cheese to the baby spinach and top with the ginger vinaigrette
- consume salad and have your mind blown
